Gladiator mounts are unique mounts tied to rated arenas. Since Warlords Season 1, they're obtained by earning the Gladiator title during their respective PvP season. From season 1 to season 15, they were instead granted to the top 0.5% of arena teams at the end of their respective PvP season. There is no way to earn previous seasons' gladiator mounts.

Most gladiator mounts are dragons of some kind. The only exceptions so far are the gronnlings from Warlords of Draenor, the soul eaters from Shadowlands, and the felbats from The War Within.

The Burning Crusade

The Burning Crusade gladiator mounts were nether drakes.

Wrath of the Lich King

Wrath of the Lich King gladiator mounts were frost wyrms.

Cataclysm

Cataclysm gladiator mounts were twilight drakes.

Mists of Pandaria

Mists of Pandaria gladiator mounts were cloud serpents.

Warlords of Draenor

Warlords of Draenor gladiator mounts were gronnlings.

Legion

Legion gladiator mounts were storm dragons.

Battle for Azeroth

Battle for Azeroth gladiator mounts were proto-drakes.

Shadowlands

Shadowlands gladiator mounts were soul eaters.

Dragonflight

Dragonflight gladiator mounts were either standard drakes or slitherdrakes. Each one came with a matching drakewatcher manuscript to transform the  [Highland Drake] or  [Winding Slitherdrake].

The War Within

The War Within gladiator mounts are felbats.
