The following is an overview of units appearing in Warcraft: Orcs & Humans. Units are either trained at buildings or summoned by spell-casting units. Each unit from one faction has a counterpart with very similar or identical stats and abilities in the other faction, except for Wounded and The Dead, which are grouped together here for convenience. The biggest difference between the factions are the spells available to each.

Neutral and Hero units cannot be built or summoned, and appear only in Dungeon maps (missions 4 and 8 of each campaign and Custom Games).

Unit stats cannot be viewed in-game, though each unit has a HP (Hit Point) bar that will give you a general idea of how much HP it has remaining.

Explanation of stats:
HP = how much damage the unit can take before dying
Armor = all Basic Damage taken by the unit is reduced by this amount; Piercing Damage is not
Basic Damage = the amount of damage dealt each time the unit hits, reduced by the target's Armor
Piercing Damage = the amount of damage dealt each time the unit hits, in addition to Basic Damage
Range = how far the unit can shoot (in squares)
Cooldown = how long the unit must wait after an attack before attacking again (lower number = faster attack speed)
Speed = how fast the unit can move
Sight = the unit's sight radius when the unit is stationary; mobile units always have a sight radius of 2
Decay Rate = the speed at which a summoned unit's Mana bar depletes (this is 45 for all units by default, or just under 5 minutes at default game speed)
Priority = units with higher priority will usually get targeted first by idle and computer-controlled units
Gold = the amount of gold used to train a unit of this type
Lumber = the amount of lumber used to train a unit of this type
Summoned = who can summon the unit, if applicable
Produced at = which building is the unit trained at
Requires = which other buildings are needed to train the unit
Build time = how long it takes to produce the unit
Unlocked in = the campaign mission in which the unit becomes available to produce (no effect on multiplayer and custom games)

Note that all attacks except Catapult projectiles have a 20% chance of missing and dealing no damage.[1]

Unused Units and Costs

The game contains some data for an unused unit, the Dragon. If added to the game, it is revealed to have 250 Hit Points and uses the Ogre portrait, but cannot do anything except move and die. In addition, some units that cannot be built in-game are given gold costs, as seen in the table below: [2]
