Wyrmrest Defenders are soldiers of various races that, along with Wyrmrest Captains, are led by Lord Devrestrasz in the Dragon Soul instance. They help retake Wyrmrest Temple from Deathwing's forces.
It is unclear if they are transformed dragons or mortals in service of dragons.
