So, do you think that DKs will be vulnerable to Exorcism, Shackle Undead, Turn evil, etc. when they use this?

They will be considered Undead for 30secs, so yes, those abilities can be used on them. And they'll most likely end early if the DK turns back into a humanoid, which given it's a buff would require a simple right-click to remove the debuffs.
